Bean salad with ham

450 grams/1 lb cooked brown beans
280 grams/10 oz cooked corn
1 head of lettuce
3 shallots
3 tomatoes
150 grams/5 oz cooked ham (2 slices)
12 slices of bacon
2 tbsp vinegar
1 tsp honey
2 tbsp tomato ketchup
3 tbsp olive oil
salt & pepper

Drain the beans and corn. Rip the lettuce into small pieces and line four individual plates with them.

Fry the bacon till crisp and drain them on absorbant paper. Chop the shallots and peel the tomatoes, cut the meat in chunks. Cube the ham.

Mix the beans, corn, shallots and tomatoes. Make a sauce by mixing the vinegar with the honey and salt and pepper to taste. Whisk in the ketchup and then the olive oil.

Put the bean mix on the plates, put the ham cubes on top, crumble and divide the bacon and pour over the sauce.

Serve with a fresh (whole wheat) baguette or sliced and buttered whole wheat bread.
