Spinach with chicken and rice

450 grams frozen spinach (uncut)
200 grams/8 oz. yellow or brown rice
4 chicken filets, 150 grams/6 oz. each
1 shallot
2 cloves garlic
100 grams/4 oz. (chestnut) mushrooms
100 grams/4 oz. coarse salami or chorizo
5 tbsp olive oil
salt & pepper
4 tomatoes

Thaw and drain the spinach and cook the rice. Peel and chop the shallot and the garlic. Clean and quarter the mushrooms. Wash and slice the tomatoes. Dice the chicken filets and season them with salt and pepper. Dice the sausage.

Heat two tablespoons of oil in a skillet and quickly sautee the shallot and garlic. Turn down the heat, add the spinach and slowly heat the vegetables for 8 minutes.

Heat the rest of the olive oil in another big skillet or wok and stirfry the chicken pieces for 5 minutes. Add the sausage and mushrooms and fry for another 3 minutes.

Add the cooked rice and spinach and mix well. Salt and pepper to taste. Present with slices of tomato.
