Orange cake

For the cake:
350 grams all purpose flour
225 grams berry sugar
25 grams butter
1 egg
50 ml (4 tbsp) water
1 tsp nutmeg
2 tsp anise seed powder
1 grated orange peel
75 grams chopped candied orange peel

For the glaze:
100 grams berry sugar
1 tbsp water or your favorite liqueur.

Put flour, berry sugar, butter, egg, water and a dash of salt into a bowl and knead into a supple ball. Add the nutmeg, anise seed powder, and orange peel and knead again. 

Put the dough onto a non-grease baking sheet and form the dough into a round cake of about 1 cm (1/3 inch) thick. Bake the cake in a preheated oven at 200ºC/390ºF for 30 minutes. 

In the meantime prepare the glaze. Sift the fine berry sugar over a bowl, add drop-by-drop the water (or liqueur) stirring constantly, until the glaze is shiny and thick but spreadable.  Allow the cake to cool on a rack. Spread the glaze on it and let it set for an hour.
