Layered cake

85 grams flour
170 grams butter
170 grams sugar
5 eggs
1 tsp nutmeg
2 tsp cinnamon
1 tsp allspice
1/3 tsp powdered cardamom
tsp powdered clove
tsp vanilla extract

Mix butter and sugar. Splice the eggs, add the yolks to the sugar/butter. Mix all spices in with the flour and add the spiced flour spoon wise to the butter-and-sugar. Beat the egg whites until stiffened and fold in the dough.

Preheat the oven to about 225F/110C. Butter a square cake pan. Put in a thin layer of dough and bake until the top is markedly coloured. Butter it and quickly add another layer of dough. Repeat till the dough is gone. Make sure the top layer is nicely browned. Dump the cake onto a cooling rack and sprinkle it with icing sugar.
